Kettle Corn for Dinner

Today I am having kettle corn for dinner. I got home from work very late and all I had in the cupboard was popcorn kernels and coconut palm sugar.

1/4 cup vegetable oil (I use olive)

1/4 cup cocnut palm sugar

1/2 cup unpopped popcorn kernels

Heat the oil in a large pan (with lid) over medium heat. Once it is hot (test by dropping a few drops of water on the pan, if it sizzles, you are good to go), stir in the sugar and popcorn. Place lid, and shake the pot constantly, like with the Jiffy Pop on the stove. Once the pooping slows to 2 seconds between pops, you are done. Remove from heat. Pour into bowl. Let cool. Enjoy!
