Vegan Gluten-free Strawberry Blueberry Muffins

You can use whatever fruits you have around to make these babies. Just chop larger fruits into small chunks (think blueberry size!) or if using frozen, do not thaw.

2 cups rice flour
2 1/2 tsp xanthan gum
2 tsp baking powder
1/4 tsp Himalayan crystal salt
1 cup coconut palm sugar
1/2 cup coconut oil (extra virgin)
1 cup milk (I make fresh hemp milk)
1 1/2 tsp vanilla extract
1 1/2 cups fruits

Heat oven to 350. Grease muffin tins or line with little paper cupcake cup thingies.
In a medium bowl, mix flour, xanthan gum, baking powder and salt. In a large bowl, mix oil and sugar. Add milk and vanilla, mix. Then stir in flour mixture until just mixed. Mix in fruits, fill muffin tins and then bake for about 30 minutes, or until edges are browner and muffin top is firm to touch.

I baked mine in baby bundt tins… I just love the shape!!

Zesty Vegan Gluten-Free Orange Raspberry Goji Berry Cake Bread Loaf… Thingie…

OMG. So amazing. I love baking. This is one reason why.
2 1/4 cups rice flour

1 cup coconut palm sugar

1/2 teaspoon himalayan crystal salt

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

2 tsp xanthan gum

1/2 cup raspberries (fresh or frozen)

1/2 cup goji berries, soaked and drained 5 mins (or use more raspberries)

2 tablespoons raw coconut oil (or any vegetable oil, not olive)

3/4 cup unsweetened orange juice

zest of 1 orange

1 egg replacer (I use 2 tbsp cornstarch mixed with 2 tbsp water)

hot water, just over 1/2 cup

Preheat oven to 375 degrees F. Grease and flour loaf pan. In a large bowl, mix dry ingredients (flour, sugar, salt, baking powder and baking soda, xanthan gum). In a small bowl, add goji berries, raspberries and 1/2 cup of dry mixture to coat the nuts and berries.
In a measuring cup, add oil and add hot water to make 3/4 cup. In a medium bowl, mix oil/water mixture, orange juice, orange zest and cornstarch.
Combine liquid mixture to dry mixture (don’t overmix!). Add more water if it is too dry. Fold in berries. Bake for about 1 hour, or until a knife inserted in the center comes out clean.

Let cool. Get zesty.
