…Plain-Jane Vegan Vanilla Mini Gluten-Free Bundt Cakes…

I made 6 mini bundt cakes. They are plain, so you can dress them however you want. Jam, chocolate syrup, frosting, ice cream…. whatevs. They are so cute and adorable. I almost don’t want to eat them. Almost.

 

1 1/2 cup rice flour

1/4 cup coconut palm sugar

1/2 tsp baking powder

1/2 tsp baking soda

1/8 tsp pink salt

1 1/2 tsp xanthan gum

1/4 cup brown rice syrup

1/4 cup agave nectar

1/2 cup coconut oil, melted

1/2 tsp vanilla

4 tbsp water + 1 tbsp cornstarch, dissolved

 

Preheat oven to 350. Grease and flour little bundt pans. Mine are about 3 inches in diameter, and this recipe made about 6. You can cook it in a regular bundt or cake pan, but the cooking time will be a little longer.

Mix all the dry ingredients in a large bowl, mix well. In a separate large bowl, combine all the wet ingredients, mix well. Add the dry ingredients to the wet ingredients in 2 batches. Spoon into little pans. Use the spoon to make sure the batter in distributed evenly in the pan. Bake for about 15 to 20 minutes. Cake will be firm to touch and golden brown when cooked.

These are so cute…. and we all know… you are what you eat!!!!! I have a really cute bundt.
